Lunch today was leftover salad from last night and a meat stick. I have no idea how else to describe it. I think I found it at Costco a month or two ago; I felt like I needed more than just the salad.
We had been gifted cooked chicken cutlets. I was debating what to do with them but have had a hankering for lasagna. I decided to layer tomato sauce, chicken cutlet, more tomato sauce, ricotta (I added an egg to it), mozzarella and cheddar shredded cheese, more chicken, tomato sauce, ricotta mixture, and shredded cheese. I topped it with pork breadcrumbs. I then made a salad with cucumber, cherry tomato, peppers, feta, and a sweet onion vinaigrette.
My sugar was high today for some reason. I think maybe because I didn’t get enough sleep last night. Also, perhaps residual from cheating so much on Saturday. Often, if I restrict my eating to later in the day, it will go down. It did but not enough.
The goal was easy to meet today. I had two cups of coffee, 64 ounces of water, and the rest in crystal light. I was done by about 7 pm. We will see if it keeps me up all night.
One of the things I’m learning about keeping yourself healthy is that you have to have gratitude. It’s difficult right now, as there is so much sad news in the world. Just the past few days, multiple people I know have lost people that were very dear to them.
I’m grateful for all of the warm memories my friends have of their loved ones. I am sending them out so much love and hope that they heal from their losses when they can.
